Black Rice, Roasted Beets, Cannellini Beans & Summer Squash - A Formula Meal

Have you heard of FORMULA MEALS yet? It's a different way to meal plan that gets dinner on the table FAST! ~ and gives you plenty to work with for make-ahead lunches! Here's how this one came about. When I visited one of my favorite humans in Seattle a few weeks ago, I left my family with three instructions: 1. Keep the seedlings moist. 2. Eat the produce before it goes to waste. 3. Clean your dishes. They tried... an assortment of veggies definitely needed some attention. Another strong wind and rain storm swept through as well, leaving us another downed tree to process. In true multi-tasking fashion, I prepped the veg, wrapped it in heavy duty foil and cooked it atop the rocks lining the b

Pumpkin Cranberry Granola, plus the Granola Formula!

Pumpkin granola that actually contains REAL pumpkin... and not just a little, but a lotta pumpkin is what's in store for you today! Plus, everything that pairs well with pumpkin ~ mmm, yes, please! We are huge granola fans around here. We eat it with nut milk, top yogurt with it, eat it on the trail, make cookies with it and sprinkle it on muffin batter. Buying it is expensive though... plus, I like a lot of "stuff" in my granola. I also like to be in charge of the ingredients and experiment with enticing flavor combinations. I first started making this pumpkin granola when I was a baking & pasty arts intern at Pietree Orchard in Sweden, Maine. I had the privilege of creating several signatu

This is another formula meal that I make often because leftovers make fantastic lunches for several days. Have you heard of formula meals yet? The basic concept is to work with a few whole ingredients - seasonal produce, proteins, healthy fats, herbs and spices that can be mixed and matched in any number of ways. I've found planning meals this way to be ingenious because it: ~ saves time ~ allows flexibility ~ requires no recipe ~ utilizes what you have on hand, and also ~ encourages exploring unfamiliar ingredients ~ boosts kitchen confidence ~ fosters creativity ~ reduces food waste ~ packs in plenty of quality nutrients This formula meal is the result of this process. I made this one earl

Adventures in Avocado Toast

I never quite understood the whole avocado toast craze until my college semesters became more intense last fall. Between studying, recipe development, photo shoots, volunteering, writing, and trying to plot the spring gardens, regular meals became, well... less regular. At the last farmer's market of the season in Kennebunk, ME, I was treated to samples of fermented vegetables from Gracie's Garden in Standish, Maine. At the time, I was already researching the gut microbiome and lacto-fermentation, so I was stoked to choose between so many tasty options. I excitedly chose two varieties to bring home - along with some crisp, colorful produce to start my own ferments. It didn't take long to dis

Follow me here too!

Hi there, I'm Catherine!

I'm so happy you stopped by my little corner of the internet. So, are you hungry? Me too! What to eat, is the question. As an organic produce grower, classically trained personal chef who eats mostly plants, and a dietetics student, I'm always thinking about food.... how it looks, smells, tastes, makes us feel and affects our environment. I regularly geek out on the science behind what makes plants scrumptious and why we should eat more of them. I love to share my experiments with YOU! So grab an apron, sharpen your knife and let's go!

 Views from my lens.
